Dating from 1550 the dolphin has had many extensions and remodeling over the centuries and rather than being designed this way it's sort of evolved into what it is today - an eclectic mix of old and new. This mix seems to work, where Rococo ceilings look down on a modern cocktail bar, where English oak paneling sits comfortably next to a stainless steel and glass bar inspired by the grille of a Bentley GT.
